Roasted Squash & apple Soup

Ingredients:

Makes :

  • 2 butternut squash

  • 2 cups of onions

  • 4 apples

  • 1 cup of butter

  • 8 cups of broth

  • 1 tsp curry

  • 2 cups milk, cream or coconut cream

Instructions:

  1. Peel and cube butternut squash, season with salt and pepper and toss in oil. Put on 2 cookie sheets and bake at 350 F for 1 hour until golden brown.

  2. Peel & dice onion and apples.

  3. Sauté onion and apples in the butter.

  4. Food process sauté mixture with squash and broth.

  5. Put in soup pan. Add 1 tsp. curry. Add the milk or cream.
