Roasted Squash & apple Soup
Ingredients:
Makes :
2 butternut squash
2 cups of onions
4 apples
1 cup of butter
8 cups of broth
1 tsp curry
2 cups milk, cream or coconut cream
Instructions:
Peel and cube butternut squash, season with salt and pepper and toss in oil. Put on 2 cookie sheets and bake at 350 F for 1 hour until golden brown.
Peel & dice onion and apples.
Sauté onion and apples in the butter.
Food process sauté mixture with squash and broth.
Put in soup pan. Add 1 tsp. curry. Add the milk or cream.
